Redox is short for reduction and oxidation and is a 2-step chemical process.
The hydrogen atoms in the thio compound bond to the sulfur atoms in the disulfide bonds causing them to break. It is at this point where the new curly shape is processed.
After, when the neutraliser is added those hydrogen atoms bond with oxygen in the neutraliser to form water molecules (H20). The sulfur atoms are released so that the disulfide bonds are reformed. Now the hair has been reshaped and set in its permanent curly style!
The good news is the disulfide bonds are back together, the bad news is these reformed bonds are fragile which is why permed hair needs extra care than your natural hair.
